Crispy Baked Chicken Wings with Honey Lime Sauce

Yield: 4 to 5 servings

Chicken Wings:

  • 1 pound of chicken wings and drumettes (party wings)
  • 1 teaspoon of baking powder
  • 1 teaspoon of kosher salt

Honey Lime Sauce:

  • 4 tablespoons of unsalted butter
  • zest and juice of 1 lime
  • 2 tablespoons of ketchup
  • 1 tablespoon of hot sauce
  • 1 tablespoon of brown sugar
  • 1 tablespoon of honey
  • ½ teaspoon of kosher salt
  • 1/4 teaspoon of ground pepper
  • 2 scallions, finely chopped (green parts only)
  • 1 tablespoon of cilantro, finely chopped

Directions:

  1. Preheat the oven to 450 degrees. Line one baking sheet with aluminum foil and place a wire rack on top.
  2. Dry the chicken wings completely with paper towels. In a large bowl or resealable bag, add the wings and sprinkle with baking powder and salt. Toss until the wings are thoroughly coated.
  3. Place the wings on the wire rack, making sure they don’t touch.
  4. Bake the wings on the middle rack for 20 minutes, then flip them over and cook for an additional 20 minutes until crispy.
  5. While the wings are cooking, prepare the Honey Lime Sauce. In a small saucepan, melt the butter. Whisk in the lime zest, lime juice, ketchup, hot sauce, honey, brown sugar, salt, and pepper until combined. Gently simmer for 1 minute to thicken. Turn off the heat.
  6. Pour the Honey Lime Sauce into a large bowl, add the cooked wings, and toss well. Plate the wings and top them with scallions and cilantro.

  7. Plate the wings immediately and serve with blue cheese dressing and celery sticks.
