Two Variations of Lava Cake: Red Velvet and Chocolate

For the Red Velvet Lava Cake:

  • Ingredients:
    • 1/2 cup unsalted butter
    • 1 cup granulated sugar
    • 2 large eggs
    • 2 teaspoons red food coloring
    • 1 teaspoon vanilla extract
    • 1/4 cup cocoa powder
    • 1/4 teaspoon salt
    • 3/4 cup all-purpose flour
    • 4 ounces cream cheese, cut into small cubes
  • Instructions:
    1. Preheat your oven to 425°F (220°C).
    2. In a microwave-safe bowl, melt the butter.
    3. In a separate mixing bowl, combine the melted butter, sugar, eggs, red food coloring, and vanilla extract. Mix well.
    4. Add the cocoa powder, salt, and flour to the mixture, and stir until everything is well combined.
    5. Gently fold in the cream cheese cubes.
    6. Grease 4 ramekins or oven-safe dishes and divide the batter equally among them.
    7. Bake for 12-14 minutes, or until the edges are set but the center is still slightly jiggly.
    8. Remove from the oven and let the lava cakes cool for a few minutes.
    9. Gently run a knife around the edges of the ramekins, then invert them onto serving plates.
    10. Serve warm with a dusting of powdered sugar, a scoop of ice cream, or your favorite topping.

For the Chocolate Lava Cake:

  • Ingredients:
    • 1/2 cup unsalted butter
    • 4 ounces semisweet chocolate, chopped
    • 1 cup powdered sugar
    • 2 large eggs
    • 2 large egg yolks
    • 1/2 teaspoon vanilla extract
    • 1/4 cup all-purpose flour
  • Instructions:
    1. Preheat your oven to 425°F (220°C).
    2. In a microwave-safe bowl, melt the butter and chopped chocolate together.
    3. In a separate mixing bowl, whisk together the powdered sugar, eggs, egg yolks, and vanilla extract.
    4. Add the melted chocolate mixture to the egg mixture and stir until well combined.
    5. Gently fold in the flour until no streaks remain.
    6. Grease 4 ramekins or oven-safe dishes and divide the batter equally among them.
    7. Bake for 10-12 minutes, or until the edges are set but the center is still soft.
    8. Remove from the oven and let the lava cakes cool for a few minutes.
    9. Gently run a knife around the edges of the ramekins, then invert them onto serving plates.
    10. Serve warm with a dusting of powdered sugar, a drizzle of chocolate sauce, or a scoop of vanilla ice cream.
